A couple of years ago I survived on a diet that consisted, pretty much solely, on grilled cheese sandwiches. It was fine. It was cheap. It was tasty. For what it lacked in nutritional value, it more than made up for in monetary savings. It was easy. It only required bread and sliced American cheese.
That was then. This is now.
Two summers ago I met Jen and all that changed. Jen had the idea that American cheese was unacceptable and preferred to slice cheddar cheese by hand to use on her sandwiches. This is a habit that I, unfortunately, got into. For the last few months I have been using cheddar cheese from a stockpile of extra cheese I had after an even that I catered. Eventually the cheese faded and I was stuck with nothing to eat.
After a quick trip to the neighborhood deli I returned with some American cheese and fried myself up a pair of grilled cheese sandwich. What happened next destroyed my soul. I No longer enjoyed American cheese!
I reluctantly choked down the two sandwiches, all the while wishing that they were made with cheddar, deliciously sharp cheddar. Because of Jen I am unable to enjoy that which once fulfilled me so thoroughly.
So I write to you now, trapped in this cheese prison, to warn you. Do not suffer my fate! Enjoy the American cheese. Relish its unearthly processed texture, love its inability to collect mold for if you step into the realm of the cheddar there will be no turning back.

I was spoiled young.. I've always preferred cheddar (And now some english cheeses too).
Like in omlets. On burgers. In grilled cheese sandwiches..
Mmmm cheddar...
(Although like wallace (& gromit) says, a good wedneslydale (sp?) is great on crackers)
)00 and spinach and feta in an omlet would be delish right now.. (Too bad feta has too many carbs... damn this diet! )

The babysitter emerges!
Actually it's been a while since I had one of your yellow "grilled" cheese sandwiches. We should do that again some time.

Chefelf,
I have a serious suggestion. Try this: Make a sandwich consisting of two slices of white bread, 1 slice of american cheese, and a nice even layer of mayonaise. Eat with a glass of whole milk. I cannot be sure that you'll enjoy it, but I sure do.

Is that a Barbarian Brothers recipe? If so I'll do it. Anything to beef up like my heroes.

Well JG you had best get on the phone right away to that Kindergarten that you've sent your friend back to because I'm here to tell you that blue cheese is real. Here are some instructons on how to make it so that you can even go off and build it yourself just so that you can see it. Because seeing is believing after all:
