The only thing that comes to mind, Mr R, is the sort of freebie software that comes with most digital cameras. Otherwise, you can try Photo Shop Elements. It's pretty easy to use. You might have to show her one or two things, but for the most part it's quite simple.

Photoshop Elements is a bargain at $99 (or less.) Does Mrs. Robinson have/need a scanner/digital camera? most all hardware these days is packaged with some image editing software of some sort that will do the same stuff in general.
