Star Wars Infinities: Return of the Jedi
Crimson Empire
Crimson Empire II (actually started, but never finished this one)

Art of Empire Strikes Back
Art of Return of the Jedi
A Guide to the Star Wars Universe (before it was revised and expanded)
Star Wars: Behind the Magic (CD-ROM)
Video Games:
Dark Forces (actually cheated on the last level because I had lost all patience, played the PSX version a bit just for curiosity sake)
Dark Forces II: Jedi Knight (along with the MotS expansion, my favorite pc game of all time)
Jedi Knight Companion Missions: Mysteries of the Sith (expansion)
Jedi Knight II: Jedi Outcast
Jedi Knight: Jedi Academy (great successor to the first game in many ways)
X-Wing Alliance (never finished it)
Shadows of the Empire (demo)
Star Wars Battlefront (technically finished it, never beat all the impossible Galactic Conquest missions, buggy multiplayer support)
Star Wars Battlefront II (haven't really played through the Single Player much yet, and very little multiplayer after the beta)
Star Wars (the original arcade game)
Empire Strikes Back (sequel to the first arcade game)
Atari 2600 Star Wars games (of which there were several, including Jedi Arena, that Imperial Walkers ESB one, and some one with the Millennium Falcon I never could figure out)
Star Wars Arcade (32x version and a little of the arcade version.. never beat it)
Star Wars Trilogy Arcade (awesome! Never finished all the missions together in one sitting though)
Episode I Racer (PC version, never finished it: wish I'd taken my chance to play the arcade version!)
Star Wars Demolition (Dreamcast, never finished it, sucked)
Jedi Power Battles (horrible game, PSX and Dreamcast... beat Dreamcast version I think, it was so horrible!)
Masters of Teras Kesai (PSX, wasn't as bad as I heard, but still forgetable, beat it once to unlock Vader, never played it again after that)
Episode I: The Phantom Menace (PC. played around the first level, watched my friend beat it)
Lego Star Wars (beat the demo, I think)
Republic Commando (good, but short, and fun but buggy multiplayer)
Rogue Squadron (PC, never beat it)
Episode I: Battle for Naboo (PC, also never beat it)
Rogue Squadron III: Rebel Strike (played it a little on in-store demos on the GC)
Star Wars (NES, Game Gear... just played this one a little on emulators)
Empire Strikes Back (NES, see above)
Super Star Wars (SNES, see above)
Super Empire Strikes Back (SNES, see above)
Super Return of the Jedi (SNES, see above, friggin frustrating first level, gave up and never beat the first level!)
Rebel Assault (only played this one a little on the PC)
Rebel Assault II (skipped my way through the game using cheats just to play the interesting parts. Decent game despite being a rail shooter, too bad it hasn't aged well compared to DVD video, sadly)
RPGs:
Technically I haven't played the Star Wars RPG or the Customizable Card game. I looked at some of the cards though and almost got into a game, and skimmed the AOTC and TPM expanded RPG source books in anticipation of playing the game (but never got a chance to).
